Russell’s Wheat Free Cake

If you can’t eat wheat try this really delicious recipe. Even if you can eat wheat, try this really delicious recipe!! It’s easy and really good.

140 grams Jam. (Can vary, try apricot)
1 egg
225 grams brown rice flour (can substitute some of the flour with ground almonds)
300 grams yoghurt, can use fruit yoghurt
1 teaspoon mixed spice
1 and a quarter teaspoons bicarbonate of soda
some almonds and apricots (dried) or other nuts, seeds etc.

Mix the egg, flour, jam and yoghurt in a bowl then add the other ingredients. Put in a loaf tin and bake in the over at about 160C for at least 40 minutes or until flour is cooked.
