Lita’s Tea Bread (Bara Brith)

This is a very moist cake, delicious spread with good English butter or toasted for breakfast.
1 lb self raising flour
1 lb mixed dried fruit
2 tablespoons orange marmalade
6 tablespoons sugar
1 teaspoon mixed spice
1 large egg
clear honey
1 freshly made pot of tea

Mix the dried fruit with the sugar and cover with the warm black tea, stir to dissolve the sugar and then cover and leave overnight to allow the fruit to absorb the liquid and swell. The next day, line a loaf tin with grease proof paper. Stir the flour, spice and marmalade and the beaten egg into the fruit and tea mixture. Pourinto the loaf tin and bakeat 325F/170C.Gas 3 for about one and three quarter hours. Turn out onto a rack and brush with warm honey to glaze. Keeps very well in a tin or airtight container of some sort.
