Chocolate Brownies

Chocolate Brownies
Makes 16-20 brownies

140 g butter
200 g dark chocolate
225g sugar
60 g unsweetened cocoa
1 tsp vanilla essence
2 eggs
60g plain flour

Preheat oven to 160C/gas3 and line a baking tray (15×25cms). Melt the butter, chocolate and sugar together in a mixed bowl over a pan of boiling water. Mix well and then sieve in the cocoa. Remove from the heat and allow to cool slightly. Add the vanilla and then the eggs one at a time, mixing well after each egg is added. Then add the flour and beat until combined well and glossy. Pour into the tin, spread evenly and bake until a skewer comes out almost clean (middle should be squidgy) about 20 minutes. Allow to cool and then cut into pieces.
